This chocolate chip chia pudding recipe is made with only 7 ingredients and it’s vegan, gluten-free, dairy-free, soy-free, egg-free, no-bake, paleo-friendly, and contains no refined sugar!
Chia pudding is great for a snack, a quick breakfast, or even a sweet treat! Try this as a healthy alternative to regular pudding or ice cream, or even as a lower-carb alternative to oatmeal. It's delicious and tastes like chocolate chip cookie dough!
Plus, while we’re having this yummy, low-sugar treat, we're also getting tons of health benefits from the chia seeds. These little seeds are nutrient-dense and loaded up with antioxidants, protein, and omega-3 fatty acids. In fact, when compared gram-for-gram, chia seeds offer up more omega-3 fatty acids than salmon!
Chocolate Chip Chia Pudding
Prep Time: 5 minutes
Wait Time: 30 minutes+
Serves: 1 cup
1 C. non-dairy milk*
3-4 Tbs. chia seeds
1 serving of vanilla protein powder**
1/2 Tbs. maple syrup or honey (optional for added sweetness)
1 tsp. vanilla extract
1 Tbs. Enjoy Life Mini Chips + more for topping
Pinch of sea salt or Himalayan pink salt
* I prefer unsweetened vanilla almond milk but any non-dairy milk will work

In a bowl or mason jar, combine non-dairy milk, chia seeds, protein powder, vanilla extract, maple syrup or honey (optional), and salt
Whisk thoroughly for one minute or until ingredients are well combined
Add in Enjoy Life Mini Chips and stir
Refrigerate chia pudding for at least 30 minutes or overnight - the longer it sits, the thicker the pudding will be as the chia seeds absorb the liquid
Prior to serving, stir up chia pudding as chocolate chips will settle while chilling and top with a sprinkle of chocolate chips
I find the mini chocolate chips work better in this recipe so they don't overpower the recipe, but you can also use standard-size chocolate chips.
